Clover Club Classic Cocktail
50ml 'ROOBEE' Rhubarb Gin
15ml sugar syrup.
Start off by pre-chilling your coupette glass.
Get your shaker and add in 50ml 'ROOBEE' Rhubarb Gin.
Add in 15ml simple sugar syrup to the shaker.
Squeeze in half a lemon.
Throw in 3-4 raspberries into the shaker and give them a good muddle with the back of a large wooden spoon.
Now add the egg white to bind everything together.
Give the drink a DRY shake (i.e. without ice) to break up the egg white and flavours.
Give the liquid a quick try... at this stage it's not too late to tweak the taste by adding in some more gin or lemon juice to suit your personal preference.
Now ice the shaker up all the way to the top.
Give it a FIRM shake for about a minute or so. Go on, give it some oomph!
You're now ready to double strain the shaken liquid into your coupette glass. It should be a gorgeous pink, creamy colour.
Garnish the drink with a raspberry. Tip: place it on the rim of the glass.
Last but not least, add a sprig of fresh mint to your glass.
