Ingredients

25ml Roobee Rhubarb Gin

15ml fresh lemon juice
-
10ml simple sugar syrup
-
Bergamot bitters
-
Fresh raspberries
-
Prosecco
Directions
Pre-chill champagne flute by adding ice
Peel lemon skin for garish
Add 15ml fresh lemon juice into shaker
Add 10ml simple sugar syrup
Add 25ml Roobee Rhubarb Gin
Add 1 dash of bergamot bitters
Add 2 fresh raspberries. Gently mix
Add ice to shaker
Shake 3-4 times. This cocktail does not require a lot of shaking
Discard ice from champagne flute
Pour mixture through double strain into pre-chilled champagne flute
To finish off cocktail, top off generously with Prosecco
Slice lemon peel and add to brim of glass
