Mercato in the Fall Gin Cocktail

Ingredients

40ml Mercato Mediterraren Gin

25ml Pear syrup

25ml Fresh apple juice

20ml Chickpea water

Fresh basil

Sliced dehydrated apple

Cinnamon
Directions
Pre-chill glass by adding a few ice cubes to a coupe glass
Pour 25ml pear syrup into the shaker
Next add 25ml fresh apple juice
Pour in 20ml fresh lime juice
Add 1 fresh basil leaf to mixture
Add 40ml Mercato to shaker
Add 20ml chickpea water
Next, dry shake mixture (do not add ice yet)
Throw mixture between two cups to create fluff foam in the liquid
Add ice to shaker and shake vigorously
Finish it off by placing dehydrated apple with torched cinnamon on the foam
