Royal Gin Fizz Cocktail

Directions

1. Add 25ml fresh lemon juice to shaker
   

2. Add 20ml Simple sugar syrup
   

3. Add 50ml Mercato Gin
   

4. Add egg white or the vegan substitute: chickpea water
   

5. Add ice to the shaker 

6. Firmly shake the mixture. It requires a lot of shaking to break up the texture of the egg white

7. Fill a high-bowl glass with ice to the brim
   

8. Double strain the mixture into the glass 
   

9. Top off with 30ml of Prosecco 

10. Garnish the cocktail with fresh rosemary
